Pietra's Barbequed Salmon

Ingredients
2 teaspoons paprika
1 teaspoon chili powder
1 teaspoon ground ancho chile powder
1/2 teaspoon ground cumin
1/2 teaspoon brown sugar
1 teaspoon sea or kosher salt
4 (6-ounce) salmon fillets
Cooking spray
1 teaspoon maple syrup

Directions
Prepare grill, heating to medium. Combine first 5 ingredients. Sprinkle fish with salt; rub with paprika mixture.

Place fish on grill rack coated with cooking spray; grill 7 minutes. Drizzle fish with syrup; grill 1 minute or until fish flakes easily when tested with a fork.

Ingredients
1 tbsp butter
1 tbsp olive oil
1 tbsp honey
1 tbsp brown sugar
1 tsp minced fresh ginger
1 tsp minced garlic
2 tbsp lite soy sauce
3 tbsp dijon mustard
3.5 – 4.5 lbs salmon fillet with skin
lime slices or wedges

Directions
In a 6-8 ” frying pan over medium, mix the butter, honey, and brown sugar until the butter melts. Remove from heat. Add the soy, mustard, oil, ginger, and garlic to the pan,. Mix well. Cook slightly. Spoon over prepared salmon on foil. Let stand 15 min to 1 hour.

While cooking on grill, frequently spoon sauce over fish. Cook until opaque, 20-30 min.

Serve with lime wedges.

Last Day

Well its official. I put my one month notice in at work right before I went home this afternoon. My last day will be August 31st. The next morning, it’s off to Colorado. Earlier this week I found out that two of my friends are also quitting their jobs in August and are moving to Golden as well. Mixed Bag

For starters, let me just say that Skippy Snack Bars are really really good. Too bad they're not very good for you …

I just got the moving check-out list from our apartment manager. Mon dieu! What a list. I had no idea everything had to be sooooo perfect before we moved out. Sure I figured it needed to be cleaned, but yeesh! The checklist is 2 pages long, single spaced. We're even required to have the carpets professionally cleaned. Does renting a stain-master from the grocery store count? And how am I going to fit this crap into the incredibly short moving window we've got, exakly? Can someone explain that to me? Thank goodness I asked now instead of in two weeks. We'll have to make some plans around this. I may need to make some charts and get out the ol' slide rule (TI-89). Wonder if carpet cleaners come after 5 PM ….

At least the library had a bunch of my reserves ready to pick up. So I've got a nice thick stack of books to read … some by Gerald Durrell and some by Meg Cabot and some by Gene Stratton-Porter. Going to the library is not nearly such a chore since I found the traffic light-less route to the library (and it will work for the post office too). Boring!

I didn't write much over the weekend cuz we didn't really do anything interesting. Well interesting to anyone apart from us. We spent lotsa time at home packing and cleaning and sorting and then made margaritas and played some video games and watched some DVDs. Good fun, but not very interesting.

Today it's been all work for me, but it's always easier to do your work when you've got a fresh supply of books on CD. The local library system came through for me and I was able to pick up 6 – 6!! – sets of CDs. I'm listening to Knocked Out By My Nunga-Nungas. I've got still more coming in …

It was a waste of bits and bytes to write this, really.

Trauma!!!

We're doing tha obligatory house cleaning/purging that you do when you prepare to move. As part of this, I decided to get rid of a prized posession … the model apartment I made my last year at college in art class. It was a wrench giving it up, but it's big, bulky, delicate, serves no useful purpose, and was falling apart (and not in a minor way). It was a wench to get rid of it, but I still have lots of good memories from making it, and some pictures. Fabbity Fab Fab

I started watching Freaks and Geeks last night. I must say … it's a very good series. So much more about the people you really know in high school than most stuff like it. It's quite filled with hilariosity as well … and lots of those faces you've seen … somewhere (as in … wait, isn't that the bad dude from Spiderman?! It is!). So that's good. I should get the next disc tomorrow or Sat. Netflix Netflix Netflix!

Today has been an overall good day. I got to talk to my daddy first thing this morning and Mr. Matt was able to come home for lunch and I was able to secure a plethera of books on CD from our local library to be used on my upcoming loooong road trip from Madison to Denver … and that's very important cuz I hate driving. Also, it's Thursday, which is always good in my book.

And I've had some good outcomes from some drawings I've done lately, maybe I'll even post a couple … we'll see. I've resolved to do more drawing … and I've succeeded for three days straight now, so I guess there's hope for us all.

Packing

I actually started packing yesterday. I'd been kinda toying with the idea for a couple of days now and yesterday I finally took out a stack of boxes (I'd saved them two years ago when we moved here) and started packing. So now, one of our book cases in the living room is mostly barren … kinda sad. Also v. cool: I was going through this book that I had gotten for my birthday quite a while back (at least a year, prolly two) from someone … I'd started to read it a couple of times, but I never really gotten into it … anyhoo, I tossed into my “don't pack until later in case I want to read” pile and went on. A few minutes later, I looked down and the book looked a bit weird. So I picked it up and discovered that three crisp 10s had slid out of the back and were peeking over the edges. EXCELLENT! I love finding money I'd forgotten about (like when you clean out your purse/bag collection!).

So now I've got $30 Mad Money and I refuse to spend it on packing supplies and/or toothpaste. It will be used properly … to buy some dinner for Matt and I (which doesn't sound very mad, but we don't go out to dinner much) or maybe we'll go see a movie … both sound good. Continue reading “Packing”

I rarely post about one single recipe, but this one demands it. It was quick. It was easy. It was healthy. It was soooo good. Check out maple glazed salmon!
We spent the rest of the evning playing Final Fantasy X (sooo close to beating it) and watching Joe Schmo 2. I laughed so hard when the whole thing with Eleanor went down. That was great.
