Quick Mac & Cheese

Ingredients
8 ounces egg noodles
1 1/4 lb top round beef, cut into small chunks
1/4 cup sliced oions
1 tbsp flour
1 clove garlic, minced
8 fresh mushrooms, sliced
1/2 cup low-sodium chicken broth
1/2 cup nonfat sour cream
salt and pepper (to taste)

Directions
Bring a pot of water to a boil. Add the noodles and cook until tender, about 8-10 minutes. Drain and set aside. In a skillet over medium heat, cook the beef and onions. As the beef begins to brown, stir in the flour so that it coats the beef.

Stir in the garlic, mushrooms, chicken broth, and sour cream. Cook until the sauce is an even consistency and the mushrooms are soft. Add salt and pepper. Serve over the egg noodles.

1 cup shredded low fat cheddar cheese
1/4 cup nonfat plain yogurt
2 teaspooons butter
1/2 tablespoon disjon mustard
salt & pepper to taste

Directions
Bring a large pot of water to boil. Add the macaroni and cook until tender, about 8 minutes. While the pasta is cooking, mix up the yogurt and cheese together in the bowl. When the pasta is done, drain it and set it aside. Put the pot back on the stove andmelt the butter over medium heat. Stir in the mustard, salt and pepper. Add the cooked macaroni, tossing to coat. Mix in the cheese and yogurt. Continue to cook, stirring constantly, until the cheese is melted.

A Little Ladybug for the Wallet


I already really like my Dicover Card. You get pretty good cash back and you can get some pretty good rewards from them too (extra % back on certain things like gas/groceries). Plus, when I lost my wallet, they were by far the easiest to deal with. One company made me sign an affadavit and have it notorized (like I didn't have enough to do with having my wallet lost). But now, I've found another reason to love 'em. They have a zillion cool card designs (give or take a few million)!! And I found one I really like … the one you see up there. If ya know me pretty well, then ya know why I like it. I wanted to get their Golden Retriever one, but the dog didn't look a bit like May, so I decided on this one. Cool, huh?

Ode to Ms. Kelly

Little sister is 22 years old today. I must say that I am pretty lucky that Mom and Dad were good enough to provide me with a little sister like her. She's one of my best friends and … like she's said before, we'd be friends even if we weren't sisters but being sisters does make it extra nice.

So happy happy b'day to an excellent lil sis and a great friend. You're very talented and smart and special and nice (when you're not being snarky with me ). And we don't get to see each other nearly enough. Kisses and hugs. I love you lots!

Running in the Rain

Around 9 last night, Matt and I decided to have a nice little walk. We left and went out and spent about an hour and a half walking around our neighborhood and the little town and talking and whatever. So we decided to head back and we made it all the way to the McDonald's, about half a mile from our place … and … the sky opened up (and we're talking about a downpour). So … we ran for it. But of course, it mattered not. By the time we got home, my shoes (my best running shoes) were soaked, not to mention the rest of me. I'm sure we looked like some special species of drowned rats.

It was certainly nice to have a warm shower and snuggle into a warm bed with freshly changed sheets.

Whatever!

I added the recipe for the beef stroganoff that we cooked last night. It'll be headed into the rotation. Quick and yummy it was! I also mean to make some spice bread today, but I don't know if I'll get around to it. I played a wee bit too much over the weekend and now I've got to play a bit-o catchup (or is that catsup?).

I've also been meaning to tell y'all how much I like Netflix. As Lorelai would say, “I'm lovin' it like a two-dollar whore.” It's so speedy and fun and they've got an amazing selection of titles. It's nice too that so many TV shows are coming out on DVD. Now you get the chance to watch shows you might never otherwise try out. I'm planning to order up 24 (that show with Kiefer Sutherland) and Matt wants Joe Schmo the first. Lotsa fun to be had hanging around the house.

More Yakkin' About the TV

When we were at Target the other day, I noticed that they've put Northern Exposure on DVD! That's cool, of course, because I love the show, but what's really really cool is the packaging. The boxed DVD set is wearing an orange parka with a little moose zipper pull. It's soooo cute. I've got very nice memories of Northern Exposure. I used to watch it between classes Monday, Wednesday, Friday during college… A&E has good stuff on.

Rain Rain Go Away

It's been raining!!! Lots!! So much that we hardly left the apartment all weekend. Everytime we tried to do something out-of-doors we were met with stormy clouds. So we whittled away the long weekend by playing video games and watching movies … and cleaning and stuff like that. It's boring to write about, of course, but we had lots of fun.

We made a simple version of beef stroganoff tonight. I thought it turned out really well … I might have to post the recipe later. I love recipes that take five ingredients and make a very complete dinner in 20 min or so.

Oh My Geeky Stars

Leo Laporte is gone and now Patrick Norton is moving on. While Kevin Rose is a bit of a cutie, Patrick and Leo always just seemed to have that extra bit of know-how and I'm going to miss the last bit left. Screensavers won't be the same without Patrick!! No one knows who's going to be replacing him, but I hope they get someone good … and hopefully a windows person.

Dirty Mushrooms

For part of the evening's meal, I decided to cook up some zucchini & mushrooms. So I sliced up some zucchini and had it cooking up real nice and I opened the package of “fresh 'n' clean” mushrooms and dumped 'em in. As I was taking the package to the trash, I noticed that there was dirt in the package still … I rushed back to the pan and had my fears confirmed. Dirty mushrooms in my nice zucchini!! Veggies ruined and it wasn't even my fault!! Grrrr
