For the Fourth

We all really enjoyed our Fourth of July. Tabby had spent Saturday night at Grammy and Papa’s, so after I ran with some friends that morning, Matt and I got to hang out with just Ben, which was a really nice treat. We even got naps!

I had a minor disaster while preparing my potluck contribution, Squash Casserole. The pyrex dish (one of my favorite sizes with a nice plastic lid!) cracked and broke in the oven. I was only able to salvage about 1/3 of it. Boohoo.

We went over to our friends’ house for a BBQ in the early evening. We were hoping the weather would improve so we could do our BBQ out-of-doors and have our outdoor movie. Neither really happened. We got maybe 30 minutes of outdoor picnicking before we had to move it inside and it rained all evening, so the movie (The Great Race) was shown indoors. To add insult to injury, the fireworks display was called off.

The kids didn’t seem to mind. They got to play with their friends, wear their cute 4th of July outfits, eat way too much sugar, and stay up LATE. Not a bad deal!DSC_0072_editThe cupcakes turned out very well. I was inspired by these red white and blue cupcakes, but I decided to try them with angel food cake. It’s one of my favorites and it’s also very light and lower calorie and fat. I used a recipe from Annie’s eats and they turned out absolutely perfect and very very tasty.

At serving time, we pricked the tops with a skewer and used a medicine dropper to inject liquid strawberry jell-o inside. Then we topped them off with whipped cream and blueberries. They were a BIG BIG hit. The whipped cream definitely melts, though, so you cannot do this part until the very end.

  1. Poor Andrew… he only ever gets to hang out with the adults on the weekends! (Although I guess he's with kids every day during the week, so maybe it's a break.) Love your cupcakes!!

  2. It rained on us on the 4th, too. Crystal clear the remainder of the day, and we were soaking wet come time for fireworks. They still went on, though, just a little late.

    Those cupcakes look yummy!

  3. Love the pic of Tabby… so cute! And I'll definitely have to try those cupcakes. I NEED to start eating healthier but I know that I'll never be able to just cut out the bad foods, so healthier cupcakes sound perfect!
