Potpourri

As you may have noticed, I spruced things up around here a bit in the name of fall. I've been working on this theme since mid Sept… but you know … kids, housework, etc. Just finally finished it. Yay me.

We had our carpets cleaned yesterday. They look pretty good … except where the kitchen meets the living room. They also used dry cleaning instead of wet which apparently coats every surface of your house in a thin layer of whiteish powder. Matt went BS crazy last night and wiped down and vacuumed the whole house practically cuz he was paranoid about it. Not that I don't agree … I just love to see him doing housework. hehe.

I have got to get my butt in gear for holiday shopping. I've been slowly collecting ideas for people, but I am really not doing so well. I dread going to the mall, even to window shop. I just hate it.

On the bright side, Discover Card is giving you $20 for each $200 you spend at specific malls between now and Dec 31. This is awesome for us because we spend a TON on groceries, etc. at Super Target and one of the malls (Colorado Mills) in CO (not far out of our way) has a Super Target attatched. Guess where we're doing our grocery shopping until Dec 31. They also have a Borders there. All the other shops kinda suck, but anyhoo, I will check them out. Wish they had an Amazon outlet. Commentary on My Week thus Far


Some weeks, for whatever reason, are just so much more exhausting than others. This week has been one of those. It seems like every time Matt goes out of town, work gets really busy. I have excellent support, including a sister who was able to pick up Ms. Tabby from the sitter's for me yesterday, but I just get to bed too late and too tired. I can barely think, let alone write anything coherent for you to read.

Matt is back in town, though he has to go out *again* next week. Does this make 4 wks in a row?? I don't remember.

What is my point? I don't think I have one. Just rambling and moaning. Perhaps I'll have an amusing anecdote for you tomorrow. Oh here's something: I used to think people were saying “an amusing antelope.” Good night.

What's Been Cooking …

We've been eating almost all of our meals at home lately, but I haven't had time to post recipes, so in one big list, here's what's been cooking at our house.

* Layered Mexican Chicken
This was very good, but needed a bit of salt and spice (definitely have the salsa with it!)
* Slow Cooker Chicken Paella
Other than the fact that I accidentally put too much turmeric in this, it was very good. Tabby was a huuuuge fan.
* Classic Shepherd's Pie
This is a really really nice light version of a classic. Matt is a huge fan and has requested it twice again already.
* Pumpkin Dip
Absolutely perfect for this time of year, and awesome awesome with apples.
* Cajun Dip
Very spicy (hits you coming and going), but has a very nice flavor.
* Slow Cooker Lasagna Stew
No idea why they call this “stew” … it's basically just lasagna you cook in a slow cooker. So easy and very good.
* Ham and Cheese Calzones
We both really liked the filling for these, but agreed the bread was a bit much (in quantity). Might be very good as a sloppy joe kinda thing … open faced sandwich.
* Fish Stick Soft Tacos
Basically, you make a fish taco from a couple of fish sticks. Not earth shattering but very quick and surprisingly good.

Ham and Cheese Calzones

from:

Ingredients
1 pound frozen pizza crust dough, or frozen bread dough, thawed
1/2 cup fat-free sour cream
4 tsp Dijon mustard
1 1/2 tsp dried oregano
1/4 tsp black pepper
6 oz lean deli-sliced honey ham, diced
4 oz low-fat Swiss cheese
1 sprays cooking spray, or enough to coat calzones

Directions
Preheat oven to 450°F. Coat a large baking sheet with cooking spray.

Divide dough into two equal portions. On a lightly floured surface, roll dough into two 10-inch circles. Transfer circles to prepared baking sheet. Set aside.

Whisk together sour cream, mustard, oregano and black pepper. Spread mixture all over both circles, to within 1 inch of edges. Top one half of each circle with half each of ham and cheese. Lift untopped side of dough and fold over filling so it meets other side, forming a half moon. Pinch edges together to seal. Coat surface of calzones with cooking spray.

Bake until puffed up and golden brown, about 25 to 30 minutes. Let stand 5 minutes. Slice each calzone into thirds. Yields 1/3 calzone per serving.

Slow Cooker Lasagna Stew

Ingredients
1/4 cup all-purpose flour
2 1/2 cup fat-free evaporated milk
2 medium garlic clove(s), minced
1/3 cup grated Parmesan cheese
1/8 tsp table salt, or to taste
1/8 tsp black pepper, or to taste
10 oz dry lasagna noodles, cooked al dente (about 12 noodles)
10 oz cooked winter squash, thawed if frozen
1 cup part-skim mozzarella cheese, shredded
3/4 cup golden seedless raisins
2 Tbsp pine nuts, chopped

Directions
Preheat oven to 350°F. Place flour in a small saucepan and very gradually whisk in milk and garlic. Warm over low heat, stirring constantly, until sauce simmers and is thickened, about 3 minutes. Remove from heat and stir in Parmesan cheese, salt and pepper.

Spread 1/4 cup of cheese sauce over bottom of a 9 X 13-inch glass or metal pan and cover with 3 lasagna noodles; top with 1/3 of squash and 1/2 cup of cheese sauce. Sprinkle with 1/2 cup of mozzarella cheese and 1/4 cup of raisins. Cover with 3 more lasagna noodles and spread with 1/3 of remaining squash and 1/2 cup of cheese sauce; sprinkle with 1/4 cup of raisins. Cover with 3 more lasagna noodles and top with remaining squash and raisins; cover with last 3 lasagna noodles, pressing sheets firmly down. Top with remaining cheese sauce; sprinkle with pine nuts and remaining mozzarella cheese

Bake until lasagna bubbles around edges and is browned on top, about 30 minutes. Slice into 8 pieces and serve.

Ingredients
1 sprays cooking spray
2/3 cup lite honey mustard dressing
1/8 tsp table salt
1/8 tsp black pepper
2 tsp dill, freshly chopped
1 medium scallion(s), finely sliced
1 cup cornflake crumbs
1 pound uncooked boneless, skinless chicken breast, four 4 oz pieces

Directions
Preheat oven to 425°F. Coat a shallow pan with cooking spray. In a small bowl, combine honey mustard dressing, salt, pepper, dill and scallions; remove 1/3 cup and set aside.

Place cornflake crumbs in a shallow bowl. Dip chicken into dressing mixture and then cornflake crumbs; place in prepared pan.

Bake until chicken is golden and no longer pink in center, about 15 minutes.

Drizzle remaining dressing mixture (the 1/3 cup that was set aside) over chicken breasts and serve. Yields 1 piece of chicken and about 1 1/3 tablespoons of dressing per serving.

1 sprays olive oil cooking spray
2 pound uncooked boneless, skinless chicken breast
30 oz canned black beans, rinsed and drained
3 cup fat-free sour cream
2 cup shredded reduced-fat Mexican-style cheese, divided
8 oz chopped green chilies, two 4-oz cans
2 tsp ground cumin
1/2 tsp black pepper
12 medium corn tortilla(s), cut into 2-inch strips
1 cup salsa, mild, medium or hot

Directions
Preheat oven to 350ºF. Coat a lasagna pan with cooking spray.

Place chicken in medium saucepan and fill with enough cold water just to cover chicken. Set pan over high heat and bring to a boil. Reduce heat to medium and simmer until chicken is cooked through, about 10 to 15 minutes; drain. When chicken is cool enough to handle, cut into 1-inch pieces.

Transfer chicken to a large bowl and add beans, sour cream, 1 cup of shredded cheese, chilies, cumin, and pepper; mix well and set aside.

Arrange half of tortillas in bottom of prepared lasagna pan, overlapping pieces to cover surface. Top tortillas with half of chicken mixture, layer with remaining tortillas and then top with remaining chicken mixture. Sprinkle with remaining cup of cheese.

Bake until filling is bubbly and cheese is melted, about 30 minutes. Let stand 5 minutes before slicing into 12 pieces. Serve with salsa on the side.

2 medium tomato(es), chopped
1 medium onion(s), chopped
1 medium bell pepper(s), chopped
1/2 cup canned chicken broth
3 medium garlic clove(s), chopped

1 tsp ground turmeric
1/3 cup frozen green peas
2 cup cooked white rice

Directions
Place chicken, tomatoes, onion, pepper, broth, garlic, oregano and turmeric in a 4-quart or larger slow cooker (crockpot). Cover and cook on low setting for 5 hours.

Add peas and rice; cook, uncovered, until peas are tender, about 15 minutes.

2 large potato(es), peeled and cut into 2-inch pieces
1/4 cup fat-free sour cream
1 Tbsp reduced-calorie margarine
1/8 tsp table salt, or to taste
2 tsp olive oil
1 cup onion(s), chopped
2 medium carrot(s), diced
2 medium stalk celery, diced
1 pound uncooked ground turkey breast
3 Tbsp all-purpose flour
1 Tbsp rosemary, fresh, chopped (or 1 tsp dried)
1 tsp dried thyme
1/2 tsp table salt
1/4 tsp black pepper
2 cup canned chicken broth, or beef broth

Directions
Preheat oven to 400ºF.

Place potatoes in a large saucepan and pour in enough water to cover potatoes. Set pan over high heat and bring to a boil; reduce heat to medium and simmer 10 minutes, until potatoes are fork-tender. Drain potatoes, transfer to a large bowl and add sour cream and margarine; mash until smooth, season to taste with salt and set aside.

Meanwhile, heat oil in a large skillet over medium-high heat. Add onion, carrots and celery; cook until soft, about 3 minutes. Add turkey and cook until browned, breaking up the meat as it cooks, about 5 minutes. Add flour, rosemary, thyme, salt and pepper; stir to coat. Add broth and bring to a simmer; simmer until mixture thickens, about 3 minutes.

Transfer turkey mixture to a 9-inch, deep-dish pie plate. Spread mashed potatoes over top and using the back of a spoon, make decorative swirls over the top. Bake until potatoes are golden, about 30 minutes.

1 cup powdered sugar
4 oz fat-free cream cheese
1 cup E.D. Smith (Canada) Pure Pumpkin
1 tsp ground cinnamon
1 tsp ground ginger

Directions
Combine the confectioner’s sugar and cream cheese with a hand mixer until well-mixed and fluffy. Mix in pumpkin, cinnamon, and ginger until fully incorporated.
Taste to make sure the sugar/spice ratio is to your liking; adjust accordingly.
Store in an airtight container in the refrigerator. Serve with gingersnaps or apple slices.

1/2 tsp celery seed
1/8 tsp cayenne pepper

Directions
Place tomatoes in a small bowl. Cover with 1 cup of boiling water and allow to stand at room temperature for 10 minutes; drain and chop tomatoes.

Meanwhile, in another small bowl combine cream cheese, yogurt and chili sauce; mix well. Add tomatoes and remaining ingredients; mix well and refrigerate until ready to serve.

4 large burrito-size wheat flour tortilla(s)
1/4 cup light sour cream
1/2 cup salsa
2 cup lettuce, shredded
1 large tomato(es), chopped
2 oz low-fat cheddar or colby cheese, shredded (about 1/2 cup)

Directions
Cook fish sticks according to package directions.

Wrap tortillas in aluminum foil and warm in a 350°F oven for about 10 minutes.

Top each tortilla with 2 fish sticks, 1 tablespoon of sour cream, 2 tablespoons of salsa, 1/2 cup of lettuce, 1/4 of the tomato and 2 tablespoons of cheese; roll up tortillas and serve.

1 pound uncooked lean ground beef (with 7% fat)
1 small onion(s), chopped
1 medium garlic clove(s), minced
28 oz canned crushed tomatoes
15 oz canned tomato sauce
1 tsp table salt
1 tsp dried oregano
1/2 tsp dried basil
1/4 tsp crushed red pepper flakes, or to taste
1 cup part-skim ricotta cheese
1 1/2 cup part-skim mozzarella cheese, shredded, divided
6 items dry lasagna noodles, no-cook
1/2 cup shredded Parmesan cheese, strong-flavored like Romano or Parmigiano Reggiano

Directions
Heat a large nonstick skillet over medium-high heat. Add beef, onion and garlic, and cook, stirring frequently and breaking up meat with a wooden spoon as it cooks, about 5 to 7 minutes. Stir in crushed tomatoes, tomato sauce, salt, oregano, basil and crushed red pepper flakes; simmer 5 minutes to allow flavors to blend.

Meanwhile, in a medium bowl, stir together ricotta cheese and 1 cup of mozzarella cheese.

Spoon 1/3 of beef mixture into a 5-quart slow cooker. Break 3 lasagna sheets in half and arrange over beef mixture; top with half of ricotta mixture. Repeat with another layer and finish with remaining 1/3 of beef mixture.

Cover slow cooker and cook on low setting for 4 to 6 hours. Remove cover; turn off heat and season to taste, if desired.

In a small bowl, combine remaining 1/2 cup of mozzarella cheese and Parmesan cheese; sprinkle over beef mixture. Cover and set aside until cheese melts and lasagna firms up, about 10 minutes. Yields 1/6th of dish per serving.
