Mini Calzones

from: Adapted from Jamie's Dinners

Ingredients
puff pastry (freezer section)
pepperoni
mozzarella (shredded)
cherry tomatoes
fresh basil
mushrooms (fresh, sliced)
sea salt
egg wash (1 egg yolk, 2 tbsp water beat together)

Directions
Heat oven to 425 Roll out your puff pastry to a bit less than 1/4″ thick. Use some kitchen object as a template to cut out 7″ rounds. Take each round and squish a cherry tomato over it, breaking up the skin into small pieces. Cover the tomato with some shredded cheese. Sprinkle on some basil and sea salt. Top with a couple of slices of pepperoni and some mushrooms.

Fold the pastry in half onto itself, trapping the filling inside. Crimp the edges of the pastry with your finger or a fork or whatever. Brush the pastry with the egg wash.

Arrange the little calzones on a cookie sheet and bake them until golden brown and puffy … approx 15-20 min.

But Can I Pull it Off?

I have a small scheme. I want to spend all day tomorrow at home. There is a whole list of things that I want to do …

~ clean house (yea, I know, but it needs done!)
~ work on some stuff for this site
~ make some major updates to the site
~ learn how to screen print with my new print gocco
~ work on my New York scrapbook
~ work out
~ make some food, so I can experience home cooking that doesn't involve the delightful Mr. Ramen
~ catch up on my Tivo watching

But the trick will be actually staying here for a whole day. This is going to take major planning today to ensure that I have all necessary tools. Being drawn away from the house to pick up something for a project could derail my entire day and send me into a mall-related shame spiral. AaaaahhhhhH!

On the Brink

It's 6:30 here in CO, which reminds me of another thing to do … reset my blog time to MST instead of CST. And that's how my life feels right now. There's tons of little things in my life that I'm longing to do but don't have the time for. Today for instance, I'm going to stop blogging in about 5 minutes and then I'll go get ready for work. Immediately following that, I'll drive for about 25 minutes to work and then I'll work for about 8 hours. Then when I'm done working, I'll come back here and have as much of a workout as I can fit in, approximately 45 minutes. When that is done with, I'll get cleaned up and drive back across town to go to my Grandma's B'day dinner. That will last pretty long … I'm guessing until 8 or 9 and then we'll drive back across town and I'll spend the remainder of my evening getting ready for tomorrow and doing things that absolutely have to be done in some sort of time frame (i.e. pay bills or figure out what the hell that smell is coming out of the refrigerator).

And that, fun as it is, is what my life has been like lately. I've been running from point A to point B and spending very very little time at home. It's the polar opposite of living in Madison where, for about 6 months every year, we hardly left the house to do anything, except, that is, to drive to the airport and fly someplace more interesting. Haha.

I'm glad for being able to lead a more interesting life here and I'm sure things will calm down a little when we get more settled in, but right now, I'd give a lotta dough to be able to take Friday off (which I can't, since we have travel plans that I need to save them for!!).

I am, however, planning to spend an entire day at home this weekend. I will accept visitors, but I will not be leaving my humble abode. And hopefully that will give me some of the time that I need to get some stuff done!! And I don't mean pay bills.

New Years!

Ahhh. The party was EXCELLENT last night. We had an all-time-high turnout and a spectacular fireworks display, compliments of my dear Vati and husband, setting no less than 30 small brush fires which we hurriedly put out, caused by some mortars going off too close to the ground.

I have a camera full of great pictures and hopefully I'll be able to get them posted in some sort of timely(ish) fashion. Cross your fingers. Well I must fly! Bye bye!
