One of the best things about coming home is being back in my own kitchen. While we’re at home, eating out is a nice treat, but while traveling it becomes monotonous and excessive and all any of us wants is to be back in our own kitchen eating “normal” food.
Here’s what we’re cooking up this week:
- my parents had us over for 4th of July and made salmon using this recipe, a family favorite, and corn on the cob, green beans and a fruit salad … possibly the perfect summer meal
- we made up buffalo chicken salads using Frank’s Buffalo sauce on breaded chicken tenders (though we’ve done just grilled chicken tenders) … we serve them up on mixed greens with carrot shreds, blue cheese and a dressing 2 parts buffalo sauce and 1 part ranch
- we made one of my all-time favorite salmon recipes, salmon with lemon relish … it is super good for summer since you serve it over a bed of spinach
- Ben’s new favorite fruit is cantaloupe and I’ve been recently making up fruit salads with cantaloupe and strawberries – it’s incredibly pretty in the bowl
Stuff I want to try SOON
- not that I really NEED any sweets in my life right now, but this coconut peach upside down cake looks amazing, ditto this strawberry pie
- and speaking of peaches (one of my all-time favorite summer fruits), I love this round-up of peach recipes, sweet and savory on TheKitchn – I especially want to try the honey chicken, sweet potato and peach kabobs
- I forever have some eggs to use up and these spinach feta eggs look soooo good
- Matt and my dad LOVE their ribs … I am sure I could gently nudge Matt into BBQing some this weekend (maybe for my darling sister’s birthday!), using this recipe from DALS or another
- and speaking of DALS and grilling, their post on grilling pizza has me thinking we should try that again, maybe for movie night this Friday
- maybe instead of popcorn and M&Ms for movie night we can do ice cream cones – here is a tutorial for making them on your panini press – wonder if my George Foreman would work?
- we did NOT plant zucchini in our garden this year (we seem to be the only people on earth that can’t grow it in great abundance), but I still love it and these recipes from TheKitchn look very good, especially the grilled zucchini pizza (see above) or these zucchini fritters
- I am super tempted to try this creamy avocado pasta from oh she glows – it looks very yummy
- another thing to stick on the grill: whole carrots with balsamic glaze
- maybe since I finally came to enjoy pork this winter, I can try a new recipe for it this summer: french oven pulled pork
- and last but not least, I simply must try this corn and jalepeno dip
Lately all I want to eat is buffalo chicken sandwhiches for some reason. So must try this salad. Thank you. And I love love zucchini!
