Jam-Packed Weekend

We had an absolutely jam-packed weekend. Friday, I went birthday shopping with my mom and sis and then we picked Matty up at the airport and went to dinner at our favorite chinese restaurant.

Saturday started bright and early with a Puppy Triathalon and a trip to A Paris Street Market. Next, we went to a 50th birthday party for a family friend, which was very fun. Then we made a brief stop off at my parents' house to get some food together, wrap some gifts, and pick up Loki for Birthday part Deux. One word: YUM!

On Thursday, Holly Friend invited me over … we had planned on Tue to make dinner together on Thursday. She asked me what I wanted and after much deliberation, I suggested the cover page of Cooking Light from July. Excellent decision.

When we went to the store to get ingredients, we decided to use frozen corn instead and since we couldn't find poblanos, we substituted jalepenos. Cooking time was fairly minimal: perhaps 30 minutes. The longest part was probably roasting the peppers. I don't know what poblanos are like, but I think our jalepenos would have been just fine unroasted.

We were amazed to see that when we lifted it out of the oven, it looked JUST LIKE THE PICTURE. Tell me, does that ever happen?? Anyhoo, the moment of truth came as we sampled the pizza. WONDERFUL! I highly highly recommend this pizza, especially cosidering how healthy it is.

Cruiser


Last Saturday after shopping, I wanted to go to the library and pick up books. I hadn't had a workout yet, so I decided to ride my bike. It was quite the workout too. The library was 2.5 miles away and I had about 30 minutes to get there before it closed. That doesn't sound bad, but I pretty much sprinted the whole way and made it with five minutes to spare.

I loved it though! It was so nice to combine an errand with a bike ride and I want to do it more. Now, my mountain bike is great and all, but I think it might be fun to have a lovely little cruiser bike … no bending over on the handle bars or anything. Of course, off-roading won't be quite so nice, but the accessories are amazing.

Roasted Fresh Corn, Poblano, and Cheddar Pizza

Ingredients
2 poblano chiles
Cooking spray
2 cups fresh corn kernels (about 4 ears)
1/2 cup chopped green onions
1 garlic clove, minced
1/2 cup l% low-fat milk
2 large egg whites
1 large egg
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup (4 ounces) shredded sharp cheddar cheese
1 (13.8-ounce) can refrigerated pizza crust dough
2 tablespoons fat-free sour cream
2 tablespoons chopped fresh cilantro

Directions
Heat Broiler

Place poblano chiles on a foil-lined baking sheet; broil 10 minutes or until blackened and charred, turning occasionally. Place in a heavy-duty zip-top plastic bag; seal. Let stand 10 minutes. Peel and discard skins, seeds, and stems. Chop peppers.

Lower oven temperature to 425°.

Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add corn, green onions, and garlic; sauté 2 minutes or until lightly browned. Stir in milk; cook over medium heat 2 minutes or until liquid almost evaporates. Cool slightly. Place egg whites, egg, salt, and black pepper in a bowl; stir with a whisk. Stir in poblano peppers, corn mixture, and cheese.

Line a baking sheet with parchment paper. Unroll dough onto parchment paper; pat dough to form a 13 x 8-inch rectangle. Spread corn mixture over dough, leaving a 1-inch border. Fold 1 inch of dough over corn mixture. Bake at 425° for 12 minutes or until set. Serve with sour cream; sprinkle with cilantro.

Dog Brain

On Tuesday night, after pottery, I met my Loki at Mike and Holly's house. Mike had kindly picked up sir Loki from Doggy Daycare for me and I was mighty glad to see the pup. So Holly and I made smoothies and then we went upstairs to download MP3s.

A while later, it started to rain. Loki had been outside playing in the backyard and Mikey brought him in. So then we brought him up with us. He and Holly played and he licked the remaining smoothie out of Holly's cup. And then, suddenly, he tensed. He stared at the desk and started a very low growl with fierce barking. This is a dog who never barks at another dog and hardly ever barks at all. He's a lover, not a fighter. We finally realized that he was barking at the bust that was sitting on Holly's desk. It looks *sort of* (ok, nothing, really, but whatever) like the picture. He wouldn't stop!! I was laughing so hard I couldn't even get him under control. Holly pat the bust and told him it was nice and I pet him and told him not to be afraid, but he would not shut up. We covered it up, but then he turned to the other masky statue things on the desk (more like the picture) and continued his doggy protection of us. I just kept laughing. Finally, we brought him downstairs and the barking ceased.

Don'tcha just wanna know what goes on in their doggy brains?

I ♥ Sushi!

It's 10 o'clock and I'm sitting here, hungry. Oh sure, I had a very nice bowl of Special K Red Berries and they were nice and all, but 2.5 hours later, they're getting a bit thin. But what do I want? The apple that's sitting on my desk? No. The string cheese in the refigerator? No. No no no. I just want sushi. At 10 AM. On a Wednesday. Wouldn't ya know it.

I think perhaps on Friday, I'll pick Matty up from the airport and we'll go get ourselves some sushi. Yea, that sounds good. Continue reading “I ♥ Sushi!”

Fall TV!!

I'm totally psyched up for fall TV!!! I can't wait for new episodes of my favorite shows to start. The O.C. premiered last week, followed up by the new show, Reunion, which will garner a season pass in my Tivo line-up. Gilmore Girls starts tonight (Luke and Lorelai!! … and wtf is going on w/ Rory??!). Veronica Mars won't be back for TWO WEEKS yet, and I just don't know if I can stand the supspense. And of course, I'm totally looking forward to Desparate Housewives and Grey's Anatomy. Grab some popcorn and your Tivo remote and get giddy for fall premieres!
