Spinach Cheese Quesadillas

Ingredients
8 flour tortillas
1 ½ cups grated Monterey Jack cheese
2 cups baby spinach leaves chopped

Directions
Coat a frying pan with cooking spray or melt butter in it. Place a tortilla in and sprinkle a quarter each of the jack cheese and chopped spinach over it. Place the other tortilla over it and cook until the cheese is partially melted. Flip the whole thing over and cook it on the other side until lightly browned. Cut into 4 sections and serve warm.

1 can cream of chicken soup
1 can cream of mushroom soup
1 medium onion, chopped

1 cup or more sharp cheddar

Heat oven to 350. Take the chicken breasts and salt and pepper them on both sides. Place them in a shallow baking dish. Put a pat of butter on each and

Roasted Squash Soup

Ingredients
1 large butternut squash, halved and seeded
coarse salt and freshly ground pepper
8 sprigs fresh thyme
1 whole head garlic, unpeeled
1 tablespoon olive oil
2 to 3 cups warm homemade chicken stock or low-sodium canned

Directions
Preheat oven to 425. Line a baking sheet with a silpat baking mat; set aside.
Season squash with salt and pepper and tuck 4 sprigs of thyme into each cavity. Place squash, cut side down, and garlic on the baking sheet. Drizzle garlic with olive oil, and season with salt. Roast until fork-tender about 40 minutes. Remove from oven and let stand until cool enough to handle.

Discard thyme, and scoop the flesh of the squash into a food processor fitted with the steel blade. Peel 4 cloves of garlic, and add to the food processor. Reserve the remaining garlic for another use. Add about 1 cup stock and process until smooth. With machine running, add remaining stock until the soup reaches desired consistency. Transfer to a medium saucepan and heat through. Taste and adjust for seasoning. Serve immediately.

Spaghetti with R&R

2 tablespoons olive oil
3 garlic cloves, minced
½ cup finely chopped fresh flat-leaf parsley
½ cup plain breadcrumbs
coarse salt
1 pound spaghetti
8 ox ricotta cheese
1 head radicchio quartered, cored, and thinly sliced crosswise
freshly ground pepper

Directions
Heat 1 tablespoon oil in a medium skillet over medium heat. Add garlic and cook until soft but not browned; 1 to 2 minutes. Add parsley and breadcrumbs; cook stirring frequently, until breadcrumbs are golden, about 3 minutes. Transfer to a bowl and set aside.

Bring a large pot of water to boil and add salt. Add pasta and cook until al dente according to package instructions. Drain, reserving 1 cup cooking liquid. Return pasta and reserved cooking liquid to pot and add ricotta and remaining tablespoon oil. Toss to coat evenly. Add radicchio and half the breadcrumb mixture; season with salt and pepper. Toss to combine. Serve immediately, sprinkled with remaining breadcrumb mixture.

Ingredients

6 slices good white bread, crusts removed, torn into ¼ to ½ inch pieces
5 ½ cups milk
½ cup all-purpose flour
2 teaspoons salt
¼ teaspoon freshly grated nutmeg
¼ teaspoon freshly ground black pepper
¼ teaspoon cayenne pepper, or to taste
4 ½ cups grated sharp white cheddar cheese (18 ounces or so)
2 cups grated Gruyere cheese or 1 ¼ cups grated Pecorino Romano cheese
1 pound elbow macaroni

Directions
Heat oven to 375. Butter a 3-quart casserole dish; set aside. Place bread in a medium bowl. In a small saucepan over medium heat, melt two tablespoons butter. Pour butter into the bowl with bread and toss. Set bread crumbs aside.

In a medium saucepan set over medium heat, heat milk. Melt remaining 6 tablespoons butter in a high-sided skillet over medium heat. When butter bubbles, add flour. Cook, whisking, 1 minutes. While whisking, slowly pour in hot milk. Continue cooking, whisking constantly, until the mixture bubbles and becomes thick. Remove pan from heat. Stir in salt, nutmeg, black pepper, cayenne pepper, 3 cups cheddar cheese, and 1 ½ cups gruyere or 1 cup Pecorino Romano; set cheese sauce aside.
Fill a large saucepan with water; bring to a boil. Add macaroni; cook 2 to 3 minutes less than manufacturer’s directions, until the outside of pasta is cooked and the inside is underdone. (different brands of macaroni cook at different rates; be sure to read the instructions.) Transfer macaroni to a colander, rinse under cold running water, and drain well. Stir macaroni into the reserved cheese sauce.
Pour mixture into prepared dish. Sprinkle remaining 1 ½ cups cheddar cheese, ½ cup Gruyere or ¼ cup Pecorino Romano, and bread crumbs over top. Bake until browned on top, about 30 minutes. Transfer dish to a wire rack to cool 5 minutes; serve hot.
