Spicy Corn and Peppers

Ingredients
1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon powdered mustard
3 cups milk
1/2 cup yellow onion, finely diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon kosher salt
Fresh black pepper
Topping:
3 tablespoons butter
1 cup panko bread crumbs

Directions
Preheat oven to 350 degrees F.
In a large pot of boiling, salted water cook the pasta to al dente.
While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.
Remember to save leftovers for fried Macaroni and Cheese.

3 slices bacon, chopped

Herb Egg Noodles:
12 ounces wide egg noodles, cooked to package directions
2 tablespoons butter, cut into small pieces
1/4 cup chopped fresh parsley leaves, 2 handfuls
12 blades fresh chives, snipped or finely chopped

Directions
Heat a large deep skillet with a heavy bottom and a lid over medium high heat. Add bacon to the pan and brown. Remove crisp bacon bits with slotted spoon. Add 1 1/2 tablespoons butter to the pan and melt into bacon drippings. Add mushrooms to the pan and turn to coat evenly with butter and bacon drippings. Season the mushroom slices with salt and pepper. Saute mushrooms 2 to 3 minutes and add onions to the pan. Continue cooking onions and mushrooms 2 to 3 minutes longer, then transfer to a plate and return pan to the heat. Add remaining butter to the pan and melt it, then add meat to very hot pan and brown evenly on all sides, keeping the meat moving. Add flour to browned meat in the pan and cook the flour 2 minutes. Add wine to the pan slowly while stirring. When the wine comes up to a bubble and you have scraped up the pan drippings, add the stock and bouquet of fresh sage and thyme sprigs to the pot. Cover the pan. When the liquid boils, reduce heat to medium. Cook covered 5 minutes, remove lid and add mushrooms, onions and bacon back to the pot. Simmer with the cover off until sauce thickens a bit. Adjust seasoning and remove herb bouquet.

Toss hot egg noodles with butter and herbs. Place a bed of noodles in a shallow bowl and pour beef burgundy over the noodles and serve.

16 very thin lemon slices
1/2 C dry white wine
juice of 1 lemon (3 T)

Place wine in a large lidded skillet. Fold each sole fillet in thirds. Arrange in skillet; season with salt and pepper. Lay two overlapping lemon slices on each piece of fish. 1 1/2 cups ice cold water
1 3.4 oz package instant vanilla pudding mix
3 cups heavy cream
12 oz box nilla wafers
4 cups sliced ripe bananas

Directions
In a s mall bowl, on the medium speed of an electric mixer, beat together the sweetened condensed milk and water until well combined, about 1 minute. Add the pudding mix and beat well, about 2 minutes more. Cover and refrigerate for 3-4- hours or over night before continuing. It is very important to allow the proper amount of time for the pudding mixture to set.

In a large bowl, on the medium speed of an electric mixer, whip the cream until stiff peaks form. Gently fold the pudding mixutre into the whipped cream utnil well blended and no streaks of pudding remain.

To assemble the dessert, select a large, wide bowl (preferrably glass) with a 4-5 qt capacity. Arrange one third of the wafers to cover the obttom of the bowl, over-lapping if necessary, the one thrid of the banans and one third of the pudding. 1 dozen flour tortillas
1 large can whole green chiles
1 large can tomato sauce
1 lb. monterey jack cheese, cut in 1/4″ thick slices
1 pound ground beef
1 tsp. chili powder
1 tsp. crushed red pepper

Directions
Heat oven to 400. Brown ground beef and drain. Add tomato sauce and simmer for a few minutes. Add the pepper and chili powder. Simmer for a few more minutes.

Meanwhile, grease a 9×13″ pan. In each tortilla, roll up a slice of cheese and a chile. Line burritos up in the baking pan. Add the juice from the chiles to the sauce. Pour sauce over the burritos and bake for 25 minutes or until the cheese is melted.

Asian Beef Noodle Salad

1 cup snow peas, trimmed and cut lengthwise into thin strips
½ cup julienne-cut carrot
½ cup low-sodium teriyaki sauce
2 tablespoons lime juice
2 teaspoons dark sesame oil
2 teaspoons chile paste with garlic
½ teaspoon bottled fresh ground ginger (such as Spice World)
6 cups torn spinach
¼ cup chopped fresh cilantro

Directions
Cover noodles with boiling water in a bowl. Let stand 15 minutes or until tender; drain.

Combine beef, snow peas, and carrot in a microwave-safe bowl. Combine the teriyaki sauce and the next 4 ingredients (teriyaki sauce through ginger), and pour over beef mixture. Microwave at high for 2 minutes or until thoroughly heated. Add the noodles; toss well. Serve over spinach. Sprinkle with cilantro.

Ham and Swiss Bread Pudding

Ingredients
Cooking spray
1 ¼ cups chopped green onions
¾ cup chopped ham (about 3 oz)
2 garlic cloves, chopped
7 (1-ounce) Hawaiian bread rolls, cut into ½ inch cubes
1 ¾ cups fat free milk
¾ cup egg substitute
2 tablespoons Dijon mustard
¼ teaspoon salt
¼ teaspoon freshly ground pepper
1/8 teaspoon ground nutmeg
¾ cup (3 oz) shredded Swiss cheese, divided

Directions
Heat a small nonstick skillet coated with cooking spray over medium high heat. Add onions, ham, and garlic, sauté 5 min. Remove from heat; cool. Preheat oven to 350 degrees. Arrange bread cubes on a baking sheet. Bake at 350 for 15 min or until lightly browned. Combine milk andn ext 5 ingredients (milk through nutmeg) in a large bowl, stirring until well blended. Stir in ham mixture. Add bread, tossing gently to coat. Arrange half of bread mixture in an 8-inch square baking dish coated with cooking spray. Sprinkle with cheese. Top with the other half of the bread mixture. Bake at 350 for 25 minutes. Sprinkle with remaining cheese; bake an additional 20 minutes or until set.
