What I'm Reading/Listening To

I have a simple new rule about reading books … novels in paticular. I don't really bother unless I can get them on CD. I have delusions of grandjeur … reading a half hour every night before bed, but generally I'm scrambling to get something else together and it just doesn't happen. The Baby Whisperer's toddler book has been sitting on my nighstand for weeks. I was making good progress then I got all caught up in the party and poof … I've been in chapter 4 for a couple of weeks now. But I've been doing great with the books on CD. I listen to them in the car (30 min commute) and then at work while I'm programming.

Recently I've completed:
* The Namesake: a story about Indian immigrants and their children in America and their experiences assimilating
* Animal Vegetable Miracle: adventures in eating locally (as previously discussed)
* Angels: an Irish woman takes a break from her rocky marriage in Hollywood
… and a few others slightly less recently.

Currently, I'm reading In the Woods, by Tana French. This is a really great thriller with really well-developed characters and I'm on the edge of my seat trying to figure out whodunnit. It's wrapped up really tight and I've got no clue whatsoever. Oooh … I'm almost anxious for the morning commute just so I can hear what happens next.

A bunch of you are my friends on Good Reads (and those of you who aren't, please look me up!), but for those of you who aren't (or even who are), what books have you recently or are you currently enjoying?

The Plunge

Am I crazy? Possibly. Last week I signed up *run* the Title 9k. This is a yearly event held in CO on Mother's day. It is (as one might expect) 9k in length, or about 5.5 miles. So in exactly two months from today, I plan to pack up Ms. Tabby in her jogging stroller and run 5.5 miles with her and other moms and kiddos around the Boulder resevoir.

Did I mention I can only run about 3.25 miles right now? Yea … so I sort of need to get my butt in gear. Thing is, I kind of signed up to help me break out of my ennui (which I think has been brought on by still winter and not quite spring) and it really hasn't helped. Mid-may just seems sooooo far away. I also need to practice running with the jogging stroller. Right now I mostly run indoors on the treadmill … and while I've done fine running outside, I haven't done much of it with the jogger. Gotta work on that. And it'll be May … and theoretically warmer. And Tabby will be theoretically a bit heavier. Oy. What've I gotten myself into!??!?

Must. Train. More. Stop. Eating. Crap. On the plus side, maybe I'll look like that lovely vector chick in the graphic I borrowed from Microsoft. Nah. She's already taller in that graphic than I'll ever be … and tanner. Plus, I'm pretty sure those angles aren't natural. Or at least advisable.

Laze-abouts

We had a gloriously lazy weekend. I don't know what we did, but it didn't amount to much. Matt got home on Friday evening … I managed to keep Tabby up just late enough to see her daddy before she went to bed. We were all working on allergies or colds or tummy bugs (Tabby) and so there was much napping and lying low. We did a bit of cooking … none of it very successful … and lots and lots of laundry. We played with Tabby. We went grocery shopping. We had dinner with my parents. My dad did our taxes. We ordered shoes on the internet. Matt got to play his game. I got to play mine. Tabby got a drive around the neighborhood in her favorite vehicle. I went swimming for an hour. Tabby learned to say “bye bye.” A good weekend overall, I think. Just not much worth writing about or taking photos of ….

New Vocab Word, Plus Links

I have a phenomenon in my life. I call it a BTD which is short for “Bermuda Triangle Day.” These are the days on which EVERYTHING … gets scheduled. Somehow, some way, things (that mostly are not under my control) all get scheduled on the same day. Then I get to run around like a chicken with my head cutoff. It's fun for the whole family. And yes, you're right, there was no real point to that paragraph. Just Seinfeldian nonsense. AHh… enough of that. On to LINKS!

One Whole Year … but still my baby!!

I had planned to do a special 1 year old photo session with Ms. Tabby tonight. But by the time we went to dinner, ran one quick errand (my swimsuit imploded and I needed a new one for tomorrow night!!), she was down for the count. We got her home and couldn't even bring ourselves to change her out of her clothes and into PJs (she was wearing a soft onesie). We gave her her meds and a bit of milk and put her into her crib. She cuddled up with her frog immediately. She's grown into such a big girl, but she still wants snuggles when she's sleepy.

There's so much to say about the wonder and amazement this past year has brought to us. In my wildest dreams, I could not have imagined how wonderful it would be to bring a life into this world and nurture that life. I am unspeakably proud of our daughter. She's kind and affectionate. She's feisty and stubborn. She's intelligent and talkative. She's inquisitive and irrational. And my observation from a few months ago still stands … she's really advanced in two things: eating and flirting. Hahah.

She's reached most of those first year milestones … words … crawling … eating … sleeping throug the night … feeding herself. But I don't think of those things when I think of her. I think of her holding a remote control to the side of her head all cockeyed and pretending that it's a phone, saying “haaai” and a long string of incomprehensible (at least to me) babble. I think of her blowing kisses to all of those around her. I think of her melting the crustiest old biker guy into a pile of goo. I think of her slurping her spaghetti. I think of the giant smiles she gives us when we come to pick her up. I think of the occasional night when she just can't quite make it on her own to dreamland and we sit together in the rocker and I rock her to sleep … and she sighs that beautiful baby sigh as she drifts off.

It has been so amazing being her mommy and seeing her grow and change before my very eyes. I am excitedly awaiting each new day and tenatively holding on to the present at the same time. Here's to many many more beautiful years together.

As Bad as a Hallmark Commercial

Me and the video cam are not good buds … I don't feel like I've got much prowess with it, but the still camera? We're tight. We took around 10,000 photos last year … and a few of them were of Ms. Tabby. I did not get the freaking scrapbook finished (or even close), and I was all angsty about having photos for her party for reminiscing and such. So the morning of her party, I got up bright and early and went crazy with Windows Movie Maker. I hadn't really used it before (at least not the Vista version), but I found it INCREDIBLY easy to use and in a mere 3 hours, while Matt tended to Tabby and finished up cooking for the party (he is truly Super Dad), I made a 15 minute video with a photo or two from Tabby's first year. It turned out brilliantly … burned to DVD and displayed at the party. I would LOVE to share it with you, but since everyone is all CYA about copyright stuff, Google Video rejected my upload (it contains … get this … copyrighted music). Party poopers. Sour Cream Chocolate Frosting

Ingredients
4 mini­whole-wheat pitas, split
1 cup chopped cooked chicken (such as Perdue)
1/2 cup grated carrot
1 cup frozen corn kernels, defrosted
1/2 cup barbecue sauce
1/2 cup shredded reduced fat cheddar cheese

Directions
Preheat oven to 350 degrees. Place split pitas on a baking sheet. Put chicken, carrot, corn, and barbecue sauce in a mixing bowl and stir to combine. Spoon 2 tablespoons chicken mixture onto each pita. Sprinkle 1 Tbs of cheese on top of each, and bake until cheese is bubbly, about 8 minutes.

Ingredients
1/4 cup orange juice
3 tsp lemon juice
1 tbs white wine vinegar
2 tbs canola oil
1 tbs honey
1 tbs peeled, grated ginger

4 small flounder fillets, 4 to 6 ounces each
4 cups snow peas (about 3/4 pound)
Lemon wedges

Directions
Whisk the first 7 ingredients (OJ through S&P) together to create the dressing.

Place each fish fillet on a large square of foil and turn of the edges of the foil. Top each fillet with 1 cup of snow peas and 2 tablespoons of dressing. Fold the foil around the fish to form a pouch, and crimp so it is sealed.

Put the foil pouches on a baking sheet and bake at 425 for 15-20 minutes, until fish flakes easily with a fork. Service with rice and garnish with lemon.

2 1/2 lb beef brisket
1/2 tsp pepper
1 package dried onion-soup mix
2 tsp dry mustard
3/4 cup water
12 baby carrots

Directions
Brown the brisket on all sides in a large skillet over medium heat, about 5 minutes per side. Sprinkle with pepper. Place in a 4- to 6-quart slow cooker.

In a medium bowl, combine the soup mix, mustard, and water. Stir well. Pour over brisket. Add carrots to pot and stir. Cover and cook on low for about 6 hours — meat will be soft and tender, almost falling apart.

Remove from cooker and let stand for 15 minutes before slicing thin. Serve on sandwich buns, with ketchup or mustard.

Directions
Combine yogurt, lemon juice & mint in a bowl and set aside. Spray large non-stick skillet with cooking spray and heat over medium. Add meatballs and cook, covered, turning frequently until heated through, about 5 minutes.

Cut a pocket in each pita. Fill with 3 meatballs, tomatoes, cucumber and about 3 T of the yogurt sauce. Serve immediately.

Directions
Toss the chicken in the sauce and assemble the pizza as you would any pizza. This seems to work paticularly well if you put the jack cheese on last since it contains the bleu cheese crumbles.

Bake it up … and enjoy (possibly with celery and carrot sticks and a beer?)!

1/3 cup salsa
1/3 cup shredded reduced-fat Mexican-style cheese

Directions
Heat a large nonstick skillet over medium-high heat. Cook beef and onion, stirring frequently, until meat is fully cooked, about 5 to 7 minutes; drain off any liquid. Stir in tomatoes and reserved liquid, corn, olives, jalapenos (if using), 1/4 teaspoon of salt, cumin and pepper; simmer 5 minutes to allow flavors to blend.

Meanwhile, in a small pot, combine cornmeal, broth and remaining 1/2 teaspoon of salt; stir well. Bring to a simmer and cook, stirring constantly, until cornmeal is thick, about 5 minutes.

2 Tbsp olive oil
1 Tbsp butter
3 Tbsp all-purpose flour
3 cup fat-free skim milk
3 medium garlic clove(s), chopped
1/2 tsp freshly grated nutmeg
1/4 cup grated Parmesan cheese, fresh, divided (Parmigiano Reggianno recommended)

Directions
Place a large pot of water over high heat; bring to a boil. Add noodles; boil for 10 minutes, stirring to prevent sticking. Drain noodles and briefly rinse under cool water to prevent sticking; set aside.

Place a very large nonstick skillet over medium-high heat. Add 1 tablespoon of oil and onions; cook, without stirring for 3 minutes, and then continue to cook, stirring occasionally, for another 7 minutes. Add rosemary and water; scrape up any food from bottom of pan using a wooden spoon. Cook until water evaporates, about 2 to 3 minutes. Add soda and cook until onions are nicely browned and soft, about 3 to 4 minutes; remove to a large bowl and set aside.

Coat same skillet with cooking spray; place over medium-high heat. Add mushrooms and cook, without stirring, until they start to brown, about 2 to 3 minutes; sprinkle with salt and stir. Continue to cook mushrooms, stirring occasionally, until liquid evaporates and mushrooms are browned, about 3 to 4 minutes; add to onion bowl. (If mushrooms are too cramped in skillet, either use 2 skillets or cook them in 2 batches.)

To make sauce, place same skillet over medium heat. Add remaining 2 tablespoons of oil and butter; allow butter to melt. Add flour, stirring constantly with a wooden spoon, until combined, about 1 minute. Add milk, a little at a time, stirring to prevent lumps; bring to a boil. Stir in garlic and cook, stirring continuously, until thick, about 3 to 4 minutes. Add nutmeg and 2 tablespoons of cheese; stir to combine and set aside.

To assemble lasagna, spread 1/3 cup of sauce over bottom of a 9- X 11-inch lasagna pan or baking dish. Place 3 noodles over sauce in a single layer; spread with 1/3 cup of sauce and about 1 1/2 cups of onion-mushroom mixture. Top with 1/4 cup of sauce and then 3 more noodles; spread with 1/3 cup of sauce and about 1 1/2 cups of onion-mushroom mixture. Top with 1/4 cup of sauce and then 3 more noodles; spread with 1/3 cup of sauce and about 1 1/2 cups of onion-mushroom mixture. Directions
Heat a large nonstick skillet over medium-high heat. Cook beef and onion, stirring frequently, until meat is fully cooked, about 5 to 7 minutes; drain off any liquid. Stir in tomatoes and reserved liquid, corn, olives, jalapenos (if using), 1/4 teaspoon of salt, cumin and pepper; simmer 5 minutes to allow flavors to blend.

Meanwhile, in a small pot, combine cornmeal, broth and remaining 1/2 teaspoon of salt; stir well. Bring to a simmer and cook, stirring constantly, until cornmeal is thick, about 5 minutes.

Spoon polenta onto a large serving plate and top with beef mixture. Top with salsa, cheese and cilantro (or scallion). Divide into 6 portions and serve.

Coat same skillet with cooking spray; place over medium-high heat. Add mushrooms and cook, without stirring, until they start to brown, about 2 to 3 minutes; sprinkle with salt and stir.
