I keep trying to write you an interesting post, but it’s just not going very well. Every night I want to go to bed by like 8 PM and on Monday night I did. We’ll see how tonight goes.
I’m training very hard right now. I am in week 2 of a 6-week bootcamp which meets 3 days/week (MWF). It’s a bit more strenuous than my normal x-training routine of step class and some conditioning (if I feel like it). But I’m also just a few weeks away from my first half marathon of the season which means I’m training hard for that too. So I’m running 3 days a week in addition and resting a bit on the 7th. I am also responsible (as part of boot camp) for doing a comprehensive food journal for the duration of the 6 weeks. My normal routine is to do pretty well 5 days a week and then say “the hell with it!” over the weekend but I am trying to break that bad habit and I succeeded last weekend. Hopefully I can continue this trend.
Speaking of food, we have tried loads of new recipes this week and it’s been one of those rare runs where everything has gone super well right off. I made salmon bowls on Sunday night (a bit of sushi rice, some roasted salmon and flaked nori … YUM) then followed it up with the delectable pork ragu on Monday night. Last night I made zucchini enchiladas that were all kinds of cheesy good. I have just one more night of cooking ahead of me (tonight) since I’m going out with the girls tomorrow night. I’m making cilantro lime shrimp to put into Baja style tacos. mmmmmmm I have also been making many batches of no-bake granola bars for the kids to eat before swim lessons and me to eat before boot camp. They are AWESOME.
I’ve also been enjoying the heck out of my kiddos. We bought a second plasma car when they were on super good sale last week on Amazon and now my crazies are racing them through our house. It’s really something to behold. They’ve both had gunky eyes (I was afraid at first it was pink eye but as it went away on its own, I assume it wasn’t) and snotty noses. Luckily it’s really starting to warm up around here and I am glad to kiss the season of snot goodbye. Ben has been counting and then throwing his blanket (or whatever else is handy) and screaming “BLASSS OFF!” Since his head-wound was almost healed, he took a tumble down the stairs and got rug burn all over his nose (in addition to a bloody nose at the time). I swear the kid’s going to be half scab before too long. Tabby is alternatively engrossed in her Leapster and begging me to paint her nails or take a spin on the plasma car.
Our star-boarder, Uncle Andrew is leaving us this week. Grandma Dorothy is in town to drive back to Nashville with him and they leave on Thursday AM. We will all miss him, particularly Loki who has been getting better than average play time since he’s been around. Now we will only see him once or twice a year like the rest of our Nashville family. It’s too bad.

Here’s what I did for the salmon bowls (I might post a recipe later, but hopefully this will do for now): I cooked the rice (2 cups short grain) in the rice cooker, then stirred in a mixture (whisked together) of 2 T sugar, 2 T rice vinegar and 1T kosher salt. I roasted the salmon from frozen fillets in the oven at 400 for a few minutes so they got partially thawed and then tossed on some S&P and finished roasting them (another 10 minutes, maybe??). We crumbled the salmon over the rice and then topped it with some nori. I bought pre-crumbled nori (think it might have been Korean??) with some sesame seeds in it. The sheet nori was much more expensive. At the end, the dish closely resembles our favorite dish (Sake Gohan) from a Japanese restaurant in Nashville and we loved it. Others might prefer it with some soy sauce or more veggies or something. … Hope you like it if you make it! 🙂
Oooh, yum!! I may have to give those granola bars a try! My kids are major snackers and I am ready for something new and healthy to throw into the mix!
