Hope everyone had a good Easter (if you in fact celebrate that holiday). I know we did. We had our traditional family get-together. We usually have the same food … Ham Egg and Cheese Fondue, though this time, my aunt made some variations on the theme, including one with veggies that I thought was paticularly good. For my contribution, I made Pear Raisin Ginger Muffins which I thought turned out paticularly well. The one annoying thing about them is that they call for a cup of yogurt and I assumed that one of those little cartons was about a cup. But they're actually 6 oz. Luckily I had some extra in the fridge and could supplement, but beware! Very good, though.
As part of our Easter tradition, my mom's sister always makes Cascarones, or confetti filled eggs. I dont' know when this tradition started, but it's an enjoyable one. After we've found these babies, they get smashed over heads. This year, though, they weren't breaking very easily, especially the ones that were made with the brown eggs. Hmmm….
