Last Friday, Matt and I had a few (7) people over for dinner. From the time I conceived the idea, I knew what I wanted to serve, some picnic style food (even though the dining would be done indoors) … in light of the newly spring-like conditions around here. Of course, the second I thought of it, I started hearing rumors that the weather would be anything but spring-like on Friday night. A born optimist and long-time observer of Colorado's rather fickle weather, I plowed forward reckelssly, plannning a pretty springy meal. Luckily, with Colorado's clock-work-like craziness, rain/snow clouds of the morning cleared around 4 PM and I got my beautiful weather to accompany our good food. * Devil's Black Bean Salsa
* Spicy Tortilla Chips
* Spinach Salad with Berries and Dill (in Colorado Colore … I will have to add this later .. it's amazing)
* Corn on the Cob
* Crispy Topped Bacon and Green Onion Baked Beans
* Apple Spice Cake
I was extremely happy with this menu. The salsa and chips were a first for us, the rest of the recipes tried and true. Everything was a major hit. The one thing I'd change in this menu would be the dessert. The apple spice cake seemed a bit heavy/fallish for this menu and I'd like to substitute a lighter/fruitier dessert.

That menu sounds YUM! I am drooling thinking about it. And indoor picnics are some of the best type around!
