Is it Obvious?

Can you tell I'm just about over this “being pregnant” thing? I am not doing so well with the blogging or the emailing or the sleeping or any of that. Now in addition to not sleeping well, I am having trouble getting to sleep, even though I'm exhausted. Then this morning, Tabby woke up about an hour before my alarm was set to go off. Matt brought her into our bed. Think I got anymore sleep after that? Nope. I got to experience two little people invading my space and clawing at me. After I got over being ticked at Matt, Tabby's sweet “morning” greeting made it worthwhile.

I ended up getting up and coming into work a half hour earlier. Figured I might as well get in a bit of extra time at the office since I have to leave early tomorrow for my OB appointment. I think we will know our C-section date tomorrow. I cannot wait. I like being able to mark things on the calendar and plan for them.

This week is pretty low-key for us. We are going to dinner tonight with friends. Then Wednesday we will run our errands. Thursday we have to get the house picked up so it can be cleaned on Friday. Friday, Tabby will be at home since her sitter wanted the day off and I am only too glad to have her at home with me in the afternoon. I may take her to the children's museum or do some fun project with her at home. I am saving up my one on one time with her, that's for sure.

Nesting with a Captial N

Ahhhhhh… I am taking good advantage of my nesting instincts. Look at my pantry, people. It is a thing of beauty. After my success on Friday, we kept it up on Saturday by attacking the kitchen. The pantry is a deep dark hole and it needs a good cleaning every couple of months because it's hard to maintain. So we drag out everything and wipe down the shelves and toss old stuff and put it back together. I had a great time using scrapbook paper to label our jars of bulk ingredients (dried fruits, nuts, pasta, grains). The fridge came next.

Then Tabby and Matt went off for a nap and I deep-cleaned the rest of the kitchen. We had tracked in loads of road dust with the snow and I swept up all of that and scrubbed down the whole kitchen.

After putting away a ton of Tabby's toys, I vacuumed up the whole main floor, working especially on the edges that our cleaning lady seems to miss, and the couches. Lastly I used up a whole Mr. Clean Eraser cleaning off scuff marks on our walls (how do they get there??). My back and feet hurt like mad, but the main floor of our house looks awesome. I still want to clean out a few corners, most notably our DVD closet. We have a whole closet full of DVDs that we want to put into a couple of binders. Then we plan to use the leftover space in the closet to put some more of Tabby's stuff.

After the marathon of cleaning, we completed another race to get Tabby ready to go off to my parents' house and then get myself cleaned up for Mom's Night Out. So while I was hanging out with the girls, Matt was down in his shop working on Tabby's bed. It's getting very close to being done.

Unfortunately, all my hard work came back to bite me in the butt. I went to bed as planned but was sore and restless all night, more so than normal. I never woke up enough to realize why and take a Tylenol, I didn't get great sleep. But luckily, today was pretty low-key. We had my parents and sister over for brunch and then met our friends in Boulder to walk around the town and hang out. The ped mall there is great for the kids to play in when it's still mucky elsewhere outside.

We spent the balance of the day hanging around the house, doing laundry, cooking and napping. All in all a great weekend.

Snow Days

So I got to work AOK on Thursday. It was snowing a bit at our house but nothing when I got to work around 6:30. A couple hours later, my boss came in and (sweetie that he is) sent me home, saying it was getting nasty out and I should work from home. So I headed home. It was pretty bad out, and I was hugely glad once again for my 4WD. Little cars were all over the roads, especially on hills. I ended up giving a mom and her son a ride home. Their car had gone into a ditch and they were trying to walk back home. Anyhoo, my normal 25 minute drive was closer to an hour. Not the worst ever, but not fun.

We had decided to keep Tabby at home, so she and I worked and played together all day. She was in a great mood and we had a wonderful time. We watched movies in bed. We made tea. We made snowfall ice cream. We drew pictures. Today, happily, was more of the same. I also introduced Tabby to the world of organization. My CD pages showed up around noon and we spent a happy couple of hours putting CDs into sleeves. This was after an unhappy first hour when she kept knocking over my categorized stacks of CDs before I realized I had to involve her in the process. I think I may have a future organization junkie on my hands. Yay!

While I am not in a great position to take her out to play in the snow, she and Daddy and Loki got a couple of sessions in. Tabby had quite a good time and was very reluctant to come in … even though she was freezing cold.

So I'm pretty sure I'll have a lot of work come Monday, but I had a really nice couple of days with my baby girl.

PS: To follow up on the whole fifths disease thing, I, like 50% of adults, was already immune.

Umm.. Yea

Not doing so well with the posting this week. I'm just kind of … uninspired and, frankly, busy. Not even the interesting kind of busy. Just busy.

We've more or less decided to not remodel our basement. It would be expensive and the $$ would be hard to recoup in the awesome market we're in and we figure that we could better use the $$ to put towards a down payment. So we're crossing our fingers that the economy recovers enough in the next year or so that we can get a reasonable price out of our house and move. So I am going crazy trying to get as much excess junk cleared out of our house as possible mainly because it seems like a better idea to do it now than later. And it's going pretty well … we cleared a ton of crap out of Matt's office on Tuesday night and I've got designs on our pantry for this evening. I definitely know how to have a good time.

This has also been the week of dealing with obnoxious little junk. Like the extended warranty we were supposed to get a refund on after my car was totaled by never did. That's been a multi-day fun fest with faxes and emails flying back and forth (and getting lost). And having our taxes adjusted so that we stop loaning the government so much $$ every year (let's face it, they're not great credit risks at the moment). So it's been that sort of “musical-hold” style week. Yay.

We're also supposed to get a devil of a snow storm today. The word “blizzard” is being batted around. I will probably be taking a vacation day tomorrow if we get too much because it's just such a pain in the butt right now to maneuver through the snow. And logistics would be particularly annoying since we have a preschool tour for Tabby lined up at 9:30. Much easier to just skip work altogether and wait for most of the traffic to clear off the roads.

For having nothing to say, I managed quite well. Over and out.

Another Day

I was like the walking dead yesterday. I guess the weekend just caught up to me. Also, my body was really ticked when it had to get out of bed after like 6 hours of mediocre sleep. Picky picky.

Anyhoo, on Sunday evening, we called the after-hours nurse about Tabby because she had some itchy spots on her arms. I thought she was just kind of allergic to something or other (I used to get this all the time as a kid) and wanted to give her some Benedryl. She'd also had flushed cheeks all day. The nurse put two and two together and came up with Fifth Disease. This is apparently no big woo for her … she will get a rash off and on for a while until her body builds up immunity … but it is potentially dangerous to her baby brother … yes, the one still leasing space from me. Chances are very remote, but it could cause him to have severe anemia amongst other things. So I was summoned to the lab yesterday (after work) to give blood to see if I am immune and if not if I have been exposed. We should know soonish.

After that, I went home to pass out in bed for a while. Normally I get Tabby and she naps with me, but she has been so ridiculous about the naps since the Binky Fairy came that I left her with her sitter. Matt got her a while later and foolishly tried to get her to lie down with me which produced much screaming and woke me up in the worst part of a REM cycle. I swear I never did fully wake up and spent most of the evening horizontal either zoning out or watching bad TV.

I did, however, manage to stand up long enough to make incredible cinnamon rolls for dinner (we had eggs too, don't worry) cuz Jenn told me to.

Wowie!

We had a busy busy weekend. I am so happy with what we got done though. Friday I used my work-free half day to clear out a ton of magazines and other junk from my office, reorganize our master bathroom and make a station dedicated to wrapping gifts. I also may have sort of passed out in bed for an hour. I can't recall. We made Baja Fish Tacos for dinner – AWESOME. We tried to go swimming but we mis-timed it and ended up playing at the indoor playground and then going to Sonic for cream slushies.

Saturday was our work day. My parents met us for breakfast and we had baby hand-off. Tabby had a fun-filled day going to the salon, MacDonald's, Toys R Us and then running around my parents' backyard. Matt and I meanwhile attacked our proejcts with fury. I extracted no less than five containers (bags, boxes, etc.) of crap from our master bedroom closets. They look organized and AMAZING. Matt got five hours closer to having Tabby's toddler bed done -actually maybe even closer than that since we made a decision at the end of the day that cut back the scope of the project, saving us money, time, and most importantly, space. Dinner with my parents and sister capped off the day.

Today was our play day. We earned it. Though we did start it of with a bit of housecleaning and a trip to Good Will, we went swimming at the rec center, had lunch at Sonic and played around. We started clean-up in the backyard, getting ready to plant the garden. Not so much playtime for us, but definitely play time for Tabby, our outdoor girl.

For our last trick of the evening, we
cooked dinner for tonight (chicken thing – it was OK) and a double-batch of shepherd's pie, one for later this week and one to freeze for after the baby comes.

It's Friday, Fools!

I love Friday. It means turning off my alarm instead of just resetting it. It is usually a short day for me at work. That's not bad either. I also turn over a “new week” of pregnancy. 34 weeks down, 5-6 to go.

This weekend promises a good balance of fun and work. This afternoon, I am leaving Tabby at her sitters for a little while and attempting one of the many projects on my “before Baby Boy Comes” to-do list. After Tabby pickup and a nap (fingers crossed), tonight we are making fish tacos and hanging out around the house. We may screen a Disney movie Tabby has never seen before.

Tomorrow, we are meeting my parents for breakfast and Tabby drop off. She is going to spend the day with them while Matt and I are at home. I am going to work on more of that to-do list and Matt is going to his wood shop for hours of (hopefully) uninterrupted work time so he can finish Tabby's toddler bed (and we can start the whole bedroom switcheroo). We plan to meet up with my parents later for dinner and relaxation. It is supposed to be gorgeous, so maybe we can eat outside.

Sunday there are no official plans yet. Since it is still supposed to be gorgeous, it might be a great time to play in the dirt and start getting our yard ready for summer.

Honey Lime Chicken Enchiladas

Ingredients
1/3 cup honey
1/4 cup lime juice (about 2 large limes)
2 teaspoons to 1 Tablespoon chili powder
2 large cloves of garlic, finely minced or 1/2 teaspoon garlic powder
1 lb boneless skinless chicken breasts (about 2 large breasts), cooked and shredded
12 corn tortillas
2 cups of Mexican cheese blend, shredded (1 small bag usually is 2 cups)
1 14-oz can of green enchilada sauce (mild or medium, to your taste)
1/2 to 3/4 cup of heavy cream
nonstick cooking spray
1 Tablespoon of chopped cilantro, to garnish

Directions
Preheat oven to 350 degrees F. Place the cooked and shredded chicken in a medium sized bowl. Set aside. In a small bowl, place the honey, lime juice, chili powder and minced garlic or garlic powder. Whisk together thoroughly to combine. Pour this mixture over the chicken and cover with plastic wrap. Allow to marinate while you prepare the tortillas, 30 minutes or up to 1 hour, in the refrigerator.

Heat a large griddle till a drop of water skitters across (about 350 degrees F). Spray the surface with non-stick cooking spray or a oil it with a little bit of canola oil in between each round of tortillas. Heat tortillas about 20 seconds on each side till warm and flexible and some golden brown spots have appeared. Remove the tortillas from the griddle and keep them between a couple of paper towels until ready to use.

Spray the sides and bottom of a 9×13-inch baking dish lightly with cooking spray. In a medium bowl combine the enchilada sauce and the heavy cream. Spread about 1/2 cup of the mixture in the bottom of the oiled baking dish. Add a large spoonful (about 2 tablespoons) of the chicken mixture to the center of each tortilla in a line. Cover the chicken with a large tablespoon (or big pinch) of cheese, then roll the tortilla up from one side to make a rolled enchilada – it will be more of an over lap on the seam side that rolled tightly. Place the enchilada seam side down in the baking dish starting at one end with the long edge parallel to the longest side of the pan so that you end up with two columns of six enchiladas each.

Repeat with the remaining chicken, cheese and tortillas. You will use about 1 1/2 cups of the cheese for the filling and set the remainder aside for topping the enchiladas in the pan. Add the remaining marinade mixture to the enchilada sauce and cream mixture, if desired. Pour this mixture over the top of all the enchiladas. Sprinkle with the remaining cheese.

Bake the enchiladas for 30 to 35 minutes, until the cheese is melted and bubbly and starting to brown on top. Serve with sour cream, black beans, and rice or a green salad for a great meal.
